Layered Shrimp Cocktail in Glasses (Cheese, Egg, Shrimp, Tomato)

You can plate up like a fancy restaurant too — give it a try! I found this shrimp-and-cheese salad recipe somewhere online and fell for it a little. I love shrimp and could happily eat them on their own, but with cheese and everything else they're even better. You can do a shrimp-and-cheese salad a couple of ways: make it in a salad bowl for a homemade dinner, or layer it in cocktail glasses or long-stemmed coupes for a striking centerpiece on a special-occasion table. And a very tasty centerpiece at that! Shrimp cocktail salads are perfect for anyone watching their calories. Shrimp, like other seafood, are rich in calcium and protein and low in calories — the best kind of food, the kind you can eat and still lose weight. And this recipe is exactly that: a layered shrimp-and-cheese salad served in glasses.

  • So let's get started. The salad is built in layers, and I dab each one with mayonnaise — not the usual way, but piped into a crosshatch pattern. If you're wary of mayonnaise because you're dieting, use a light, low-fat version. For the first layer, grate hard-boiled eggs into the bottom of the glasses and season lightly with salt, then pipe on the mayonnaise lattice. Peel the shrimp and cut them into two or three small pieces, then layer them evenly into the glasses. Pipe on another mayonnaise lattice. The third layer of this cocktail salad is cheese. (Did you know there are around 2,000 varieties of cheese and more than 500 types in the world? France alone makes over 400 — from the softest, including a liquid cheese with the consistency of sour cream, to the hardest. The French recognize six cheese profiles that belong on a plate: fresh, mild, delicate, pronounced, sharp, and pungent.) Anyway, back to it: grate the cheese coarsely and layer it over the shrimp. Pipe on another mayonnaise lattice. Cut the tomato into cubes or rings — or, if you're using cherry tomatoes, into quarters. Arrange it neatly over the cheese and finish with a mayonnaise lattice. Garnish with whole peeled shrimp, fresh herbs, and lemon. The cocktail salad is ready. Chill it briefly in the fridge, then bring it to the table. Enjoy!
