Then don't skip this recipe, which was born out of a missing ingredient! Cobb salad — have you heard of that gem? I'd been wanting to make it for the longest time. Once I'd bought a head of romaine and a nice ripe avocado, I was already looking forward to the incredible flavor and the pleasure my whole family would take in this original salad. But just as I was about to make this treat, it turned out that not a single nearby store had the bacon and blue cheese the salad calls for. With nowhere else to turn, I decided to improvise — and here's what came of it. It turns out to be a gorgeous, satisfying salad, which for obvious reasons I won't presume to call a Cobb salad. So, shall we begin? Don't be nervous — everything "new" is just something old we've forgotten! Cut each egg into six wedges. Dice the tomatoes, avocado, and chicken. The romaine we'll simply tear by hand. Arrange all these pretty pieces in the bottom of a salad bowl, ideally a nice deep one. And now the key part: lay all the remaining components on top of that in stripes. Oh, and please don't forget the dressing! To make it, whisk the vinegar with the mustard, olive oil, and crumbled feta. Dress the salad right before serving!
