Saint-Germain Green Pea Soup

This wonderful French soup, known as potage Saint-Germain, is built on a base of chicken broth, though vegetarians can easily swap in plain water with a splash of vegetable oil. Either way, the result is not only delicious but wholesome, with no animal fat. Cooking method
- To start, pour either chicken broth or plain water into a small saucepan and add: the green peas (I made it with canned peas and loved it) — about 4/5 of the total; the finely chopped green onion and lettuce leaves; and salt and pepper to taste. Bring it to a boil, then turn down the heat and simmer for about 30 minutes. Carefully drain the broth through a colander, then press the peas, onion, and lettuce through a sieve to make a purée. Stir the butter into the purée and return it to the broth. Add the reserved green peas. Set it over low heat for another five minutes or so. That's it — your soup is ready to ladle into bowls.
