- The logical finish to any meal or celebration is dessert. If the dishes were rich and heavy, the ending should be light and airy. For anyone watching their waistline, this recipe is a real find. You can make fried apples with cinnamon any time of year. Take medium apples, wash them well, and core them. Cut the fruit into slices about 1/4 inch (0.5 cm) thick. Get a wide skillet ready. Heat the ghee in it and lay the apple slices out in a single layer. Salt them lightly and fry on both sides over medium heat until evenly golden. Set the hot apples on a paper towel to drain the excess fat. Transfer to a platter and sprinkle the slices with ground cinnamon. Serve the fried apples with whipped ice cream or cream — a sweet vanilla sauce works nicely too. To make the sauce, beat the sugar with the egg yolks and flour. Heat the milk, thin the mixture with the hot milk, and cook, stirring, until it comes to a boil. Take the thickened sauce off the heat, strain it, and add the vanilla.
