Vanilla Pears for Winter

Preserve the taste of ripe pears all winter long. Come winter, you'll thank yourself! Easy to make. Since pears, unlike apples, don't keep for long, I've made it a rule to put up pears for the winter.

  • This recipe for putting up pears for the winter is very simple and many will like it. I'll note right away that these ingredient amounts are for one three-liter jar. The total number of pears depends on their size. Wash the fruit and trim off the stems. Pack in the pears, vanilla, and apples, placing the apples in the center of the jar. Add the citric acid. Pour boiling water into the jar, wait ten minutes, and drain. Add half of all the sugar, pour boiling water in again, and wait ten minutes. Add the rest of the sugar, pour in boiling water, and set the jar in a pot to sterilize. Seal the cooled jars with lids. Store the preserves in a cool, dark place. The finished pears are very much like fresh fruit. I often use them to make pear charlotte.
