  • Choose an empty, clean jar for your homemade mustard. Add the dry mustard mixture and sugar, then pour in cabbage brine until it reaches the consistency you want. Seal the jar, then set it in a warm spot, near a source of gentle heat. Brine-based mustard infuses for 8 hours. If you leave it overnight, you avoid the agonizing wait. Once it's done infusing, stir in some vegetable oil and store it on a refrigerator shelf. If you notice excess liquid that has risen above the thick mass, drain it off.
