Salad with Pear, Brie and Cherry Tomatoes
The brie can be swapped for any other type of cheese. I came up with this salad on the fly. Lately I haven't wanted anything baked or fried at all. I'm drawn to all sorts of cheese-fruit-vegetable salads with light, mayonnaise-free dressings based on olive oil with a touch of honey, wine vinegar or lemon juice. So all month I've been experimenting with different combinations of ingredients and dressings. Of all the soft, bloomy-rind cheeses, I especially love brie and camembert, so I buy them quite often. I always eat them just as they are — but they also make wonderful salads.
Cooking method

Step 1:
Prepare the ingredients. For a salad with pear, brie and cherry tomatoes, you'll need: a ripe, juicy pear (Abate or Conference variety), cherry tomatoes, a piece of white bloomy-rind cheese — brie or camembert — and a salad mix (I'm using a Tuscan blend).

Step 2:
Wash the salad mix, drain it in a colander, and pat it dry.

Step 3:
Wash the pear, pat it dry, and cut it into thin slices, removing the seeds.

Cut the brie into thin slices.

Step 5:
The dressing. To make it you'll need: extra virgin olive oil, honey and a little freshly squeezed lemon juice.

Step 6:
Combine the olive oil with the honey and lemon juice. Mix everything thoroughly until smooth.

Step 7:
Spread the salad mix on a platter. Arrange the pear slices on top.

Step 8:
Add the quartered tomatoes.

Add the brie slices.

Step 10:
Shell the pistachios and add them to the salad.

Drizzle the dressing over the salad and serve. Bon appétit!
- The pistachios can be replaced with any other nuts, such as cashews. Pecans and plain peanuts toasted in a dry skillet work great too.
