  • Sherbet is the best dessert when you want something cold and refreshing. You can make it from almost any berries or fruit. Often the main ingredient is an alcoholic element like champagne, wine or liqueur. The main ingredient of this sherbet is Blue Curaçao liqueur. It has a bright blue color and an orange aroma, and it's exactly that unusual color that makes the dish so memorable. Pour the lime juice and liqueur into a bowl and add the sugar. Stir thoroughly until the sugar fully dissolves. Set aside. Separate the egg whites from the yolks. In a separate clean, dry bowl (glass or metal), beat the egg whites with a pinch of salt using a mixer — start at low speed and gradually increase it until stiff peaks form (a thick, fluffy foam). Well-whipped whites give the finished dessert its airiness. Gradually fold the lime juice and liqueur mixture into the whipped whites. Beat until large air bubbles appear. Add the white wine to the bowl; a dry wine works best here. Stir gently so the mixture doesn't deflate and the dessert keeps its lightness. Carefully pour the sherbet into a metal container and freeze for about 3 hours, until completely set. It's best to use a shallow, wide container — a metal tray, for example — so the sherbet freezes more evenly. Every 20–30 minutes, take it out and stir with a spoon so the finished dessert comes out airy and tender. As soon as the sherbet sets, scoop it into dessert glasses or champagne coupes with an ice cream scoop. It's best to chill the glasses in the refrigerator beforehand. Sprinkle the finished dessert with sprinkles, garnish with physalis, and serve right away.
