Tamarind-Garlic Shrimp

Get a taste of Thai cooking! A delicious seafood dish! This tamarind-garlic shrimp has a zesty yet mellow flavor. Sear the shrimp in batches rather than all at once so they cook properly. The recipe uses cilantro stems—you can also use the roots, washed and cleaned first. For sugar, brown or palm sugar works best. These shrimp are especially good served with steamed rice and fresh cilantro.

    1. Coat a skillet with the vegetable oil, set it over the heat, and sear the shrimp on both sides so each one cooks through. 2. Seed the chili, and peel the garlic and onion. Using a blender, purée the onion, garlic, chili, and cilantro stems. 3. Add the tamarind concentrate and fish sauce to the purée, add the sugar, pour in the broth, stir, set it over the heat, and bring to a boil. 4. Once the sauce boils, add the shrimp, let it return to a boil, then take it off the heat. Serve hot, with rice on the side if you like. Enjoy!
