Meat Baked with Vegetables

A perfect dinner in every way — and so easy to make. Fall is the season when vegetables are everywhere, so it's the perfect excuse to put together a tasty, wholesome dinner! Absolutely any vegetables work here — whatever you have on hand. All of mine came straight from my own garden, which is a real treat.

Cooking method

    Here are all the ingredients you'll need. Rinse everything well under running water.

    Cut the pork however you like — I sliced it into pieces like cutlets.

    Pound each piece lightly on both sides.

    Arrange the meat in a baking dish.

    Season with pepper.

    Season with salt.

    Brush the top with olive oil (2–3 tablespoons) — this keeps the meat tender.

    For extra tenderness you can also spread on a little sour cream, but that's optional.

    Now for the vegetables — any vegetables you have on hand will work. Slice the eggplant into half-moons. If you like, you can soak them in salted water for 30 minutes; I skipped that step.

    Cut the bell pepper however you like.

    Slice the zucchini into half-moons.

    Cut the carrots into rounds.

    Cut the onion into large wedges or half-rings.

    Trim the ends off the green beans and cut them in half. If the beans are fresh, blanch them in boiling water for 1–2 minutes.

    Cut the tomato into wedges.

    Add the broccoli florets here too; if they're fresh, blanch them in boiling water for 1–2 minutes.

    For extra aroma, toss in a few fragrant herbs — I used a Herbes de Provence blend.

    Add another 3 tablespoons of olive oil so the vegetables don't dry out.

    Add the minced garlic.

    Spread the vegetables over the meat.

    Grate the cheese over the top and bake at 350°F (180°C) for 50 minutes. From experience, I recommend covering the dish with foil for the first 30 minutes.

    Chop the fresh herbs.

    Take the dish out of the oven and sprinkle it with the fresh herbs.
