    Grate it on a coarse grater, salt it, and stir. Wait for it to release its juice, then squeeze it out well. The better you squeeze, the easier the fritters are to fry. Don't over-salt—the sausages already have salt in them.

    Knead a thick batter. You may need more or less flour—it all depends on the size of the zucchini.

    Add the turmeric and dill. I keep it to a minimum; if you like things spicier, go ahead and add more.

    Knead a thick batter. It shouldn't run off the spoon—it should drop off in a lump.

    Cut the sausages into thin strips.

    Spoon the fritters onto a preheated skillet, scatter the sausage strips on top, and press them into the batter with your hands or a spatula.

    Once the bottoms are nicely golden, flip and fry until done.

  • These fritters are tastiest hot. Ketchup makes a good dipping sauce. Instead of hot dogs, you can use bologna or ham.
