They not only make a magnificent garnish when setting out a holiday spread but are also a hit as a light yet original dish. Skewered canapés can be made from all sorts of ingredients: meat, vegetables, cheese, fruit. And you can combine these in any order — making canapés with olives, say, or just with vegetables, or just with meat. In short, there's no limit to your imagination. Here I suggest making canapés with olives, caviar and sevruga on a skewer.

  • First you need to prep the white bread. I cut off the crusts and slice the crumb into thin slabs. I slice the cucumber into rounds and cut the fish into even little pieces. Spread the bread slabs with butter. Now I move on to assembling the canapés themselves. I take a buttered piece of bread, lay a piece of sevruga on top, set a cucumber round on the fish, then some caviar, another cucumber round, more sevruga, and finish it all off with an olive. Run a skewer through all the ingredients. The canapé is ready!
