  • Every meat dish in Cuban cooking traces back to Spanish recipes. In Cuba they love their meat braised with a variety of spices so the dish comes out good and spicy, while firm green plantains are usually boiled and served as a sweet side or dessert. This recipe brings those two traditions together — it's the Creole-style fillet. To make it, take beef from the hind leg (top round) and run it through the coarse plate of a meat grinder. Add the chopped garlic, pepper, and salt, and cook until about half done. Separately, sauté the pickled bell pepper and finely chopped onion in a skillet. Toward the end, stir in the tomato paste, dry white wine, raisins, and the ground beef. Mix everything together and cook until done. Mound the finished fillet on a plate, set a portion of steamed rice alongside it, and top the rice with a fried egg (sunny-side up). Add the boiled bananas next to the rice, garnish the plate with fresh herbs, and serve. Enjoy!
