Cooking method

    Dice the onion into small cubes and chop the garlic as well.

    Pour olive oil into a skillet and sauté the onion and garlic until lightly golden.

    Now add the tomatoes, pour in the water, season with salt, ground pepper, and saffron, and stir everything together.

    Long-grain rice is best for this recipe, and it shouldn't be rinsed.

    Carefully add the rice to the pan and spread it out evenly, without stirring. The liquid should cover the rice completely. When the broth comes to a boil, lay the shell-on shrimp on top of the rice, cover the pan, and simmer for 10 minutes over low heat.

    Meanwhile, slice the olives into rings.

    After 10 minutes, uncover and scatter the sliced olives and green peas over the rice. Cover the pan again and cook the paella over high heat for one more minute. Then turn off the heat and let the dish rest, covered, for another 10–15 minutes. Serve the finished paella garnished with lemon wedges. Enjoy!
