Danish Savoy Cabbage and Bacon Salad

A tasty, fresh, and hearty Danish-style salad — make it and enjoy! Let me share a salad I love and my whole family adores. It comes with a homemade mayonnaise that has a little twist: tomatoes. The salad is great on its own, but with this dressing it's just indescribably good. :)

  • Start with the mayonnaise dressing: blitz the egg yolks with a blender, gradually drizzling in the two oils in a thin stream; whip until thick and smooth, then add the garlic, mustard, and wine vinegar and blend again; season with salt and pepper, add the puréed tomatoes, and blend once more until smooth; refrigerate for about 30 minutes. Now make the salad: heat a skillet and add the bacon cut into 2-by-2-cm pieces; cut the apple into quarters, core it, and slice each quarter into thin slices (like the bacon); put the apple in a mixing bowl and sprinkle it with lemon (or lime) juice; once the bacon is crisp, transfer it to a paper towel to drain; cut a slice or two of bread into large cubes, crush the garlic with a knife, and add them to the skillet with the bacon fat; over medium heat, dry and brown the croutons; meanwhile, halve the Savoy cabbage leaves and cut them into strips; stir the croutons (if the pan is too dry, add a drop of oil), then salt and pepper them; add the cabbage, some of the bacon, and the dressing to the apple and toss. Plate the salad and top with the remaining bacon and croutons. Enjoy this hearty Danish salad!
