Godzya — Vegetable Stew with Pork
A great dish for a hearty yet light homemade dinner! A very tasty stew. In the countryside of Ukraine's Vinnytsia region they make a dish with this curious name — Godzya. It's essentially a vegetable stew with meat, whose core ingredients are potatoes, cabbage, onion, carrot, beans, and pickles — leave out even one of these and it's not Godzya. Everything else is up to you: meat, mushrooms, celery, red cabbage, tomatoes, peppers, and so on.

- Wash and peel the vegetables. Heat a skillet, add the vegetable oil, and let it get good and hot. Cut the meat into cubes, add it to the oil, and brown it. Add the finely chopped onion and grated carrot. Sauté briefly, then set aside. Dice the potatoes and put them in a deep bowl. Shred the cabbage and add it to the bowl. Dice the pickles and add them too. Add the beans, along with the soaked and squeezed-out mushrooms. Season everything with salt, pepper, and spices, add the meat, and mix well. Transfer the whole mixture to a suitable baking dish (one with a lid). Pour in the broth. Preheat the oven to 400°F (200°C) and bake the Godzya, covered, for about an hour. In a slow cooker, the whole process takes about two hours. Serve the Godzya right in the dish it was baked in. Sour cream and fresh herbs go well alongside.
