You can use the finished dough right away, or let it rest — mine proofs while I make the topping. It's enough for either one very large pizza or two medium ones.
- In the original recipe, you can use 10–15 g of fresh yeast and warm water at 125–150 ml (I pour in 150 right away). First mix the dry ingredients on speed 1, then add the wet ones. Mix briefly, first on speed 1, then on speed 2 for 1–2 minutes. You can use the finished dough right away, or let it rise in a warm place as usual.
