Samogitian Beer Soup with Sour Cream

Surprise your family with something unexpected! This is a really, really unusual Lithuanian soup that uses beer as the main ingredient. Fair warning: it's fairly rich, since it's built on beer and sour cream. Even so, this Samogitian (Žemaitija-style) beer soup is worth trying at least once. It's especially good for cozy gatherings in the kitchen on winter evenings — refined comfort food for catching up with close friends. By the way, you can swap the soft cheese for farmer's cheese; I've made it both ways and liked the farmer's-cheese version better, but that's a matter of taste.
