Rosolje — Estonian Herring Salad with Apples and Beets
A very tasty salad of vegetables, apples, and herring. It's of Estonian origin—vitamin-packed, hearty, colorful, and wholesome. If you're a fan of vinaigrette salad or Herring Under a Fur Coat, you're sure to love Rosolje too!

Step 1:
The main ingredients we'll need to make Rosolje.

Wash the beets, carrots, and potatoes. Put them in a pot, cover with cold water, and set over high heat. Once it boils, reduce to medium and cook, covered, until tender. You can also roast the vegetables in the oven. Boil the eggs separately.

While the vegetables cook, prep the rest of the ingredients. Cut the lightly salted herring fillet into medium cubes or small strips.

Cut the pickles roughly the same way as the herring.

Chop the onion fairly small.

When the vegetables are cooked, drain off the water and let them cool. Peel the boiled potatoes, beets, and carrots, and peel the cooled eggs too. To make sure no bits of shell are left on the eggs, rinse the peeled eggs under cold running water. Cut everything into cubes.

Step 7:
Peel the apple and cut it into small squares. You can sprinkle the apple pieces with lemon juice to keep them from browning. Put all the components into one large bowl.

Make the dressing by mixing the mustard and sour cream. A mild mustard or a grainy Dijon works best.

Add the dressing to the salad and mix everything thoroughly. Let the finished salad rest in the fridge for at least fifteen minutes. To serve, sprinkle it with fresh herbs and a little allspice if you like.
- You can dress the salad with mayonnaise, or make a dressing from mayo and mustard. Taste the finished Rosolje for salt, and add more to taste if it seems to need it. If you used tart apples, add a pinch of sugar. The flavor is somewhere between a vinaigrette salad and Herring Under a Fur Coat.
