German Warm Potato Salad (Kartoffelsalat)

A bright, summery salad that also makes a great side! Serve it on its own or alongside meat, poultry, or chicken.

  • For this potato salad you'll want small potatoes, boiled in their skins and still hot. Peel them and slice into rounds about 1/4 inch (5–7 mm) thick. Layer the potatoes into a deep dish, dividing them into 3 equal portions. After laying down the first portion, add 1/3 of the beans and 1/3 of the finely chopped herbs, then sprinkle the layer with a little sugar, salt, and pepper, drizzle with vinegar, and add a small splash of vegetable oil. Important: do NOT stir the salad while you build it! Repeat the layering two more times. The salad will be warm; let it rest for at least 20 minutes so the flavors of the herbs, pepper, and vinegar bloom and the potato soaks up all the aromas. After 20 minutes, toss it well and serve as a salad. It comes out hearty, fragrant, and very fresh. This warm potato salad also works as a side for meat, fish, or poultry.
