Layered "Mistress" Salad for Valentine's Day
This one's for fans of vegetable salads with beets. It also has walnuts, cheese, and prunes, which give the finished salad not only a zesty kick but real heartiness, too. The zing comes from more than the flavor and the cheeky name — the playful presentation is half the fun. The dressing here is mayonnaise — I'd suggest making it homemade. You can also mix the mayonnaise half-and-half with sour cream for an even better flavor.

Step 1:
First, I'll prep all the ingredients.

Soak the prunes in warm water for about 10 minutes, then drain. Let them dry off a little and chop them finely into rough pieces.

Grate the carrots on the fine side of a box grater.

Mix the grated raw carrots with the finely chopped prunes and 1 tablespoon of mayonnaise.

Stir the mixture and spread it onto a flat serving plate, shaping the base of the salad into a heart with two rounded humps.

Grate the cheese on the fine side of a grater and press in 1 clove of garlic. Stir together with mayonnaise.

Pressing gently, layer the cheese mixture over the carrot layer, keeping the salad's shape.

Grate the boiled beets on the fine side of a grater.

Grind the walnuts in a blender.

Add them to the beets along with another clove of garlic pressed through a garlic press. Dress with mayonnaise and stir.

Spread the beet-and-walnut mixture over the cheese layer, leaving the top slightly open to suggest a neckline.

If you like, finish the design with "buttons" made of cheese and olives, so the dish looks even more like a corset.
