Summer Salad with Pumpkin Seed Oil

A bright summer salad that no one can resist! I love this salad for how many vegetables it packs in and for their unusual pairing with pasta. Light and tasty, it always comes through when you don't feel like standing over the stove.

  • Cook the pasta (durum wheat) and rinse it under cold running water. Wash the vegetables and cut them into large pieces — the salad will look bright, pretty, and appetizing! In a deep bowl, combine all the ingredients except the pasta, season with salt and pepper, and add the finely chopped garlic, the olives, and the fresh green peas. Add the cooled pasta and the finely chopped herbs (I usually use parsley and dill) to the colorful mix, sprinkle with pumpkin seeds, and dress with pumpkin seed oil. Dig in and enjoy summer!
