Grayling ear

Fragrant ear, not banal fish soup at home? Cook! I could not forget the unique taste of grayling soup, which was cooked in nature by friends. And so I decided to reproduce everything at home... I can say with confidence that, although the "smell of smoke" is not enough, the taste of this first dish is not inferior to the ear cooked over a campfire. Try it!

For grayling fish soup, you need to prepare products according to the list:

1. Peel the fish from the scales and gut it. Leave the internal fish oil and liver! We will cook them in the ear to saturate the taste.
2. Cut grayling carcasses into portions.
3. Peel potatoes, carrots and onions. Cut the potatoes into small cubes, grate the carrots on a coarse grater, chop the onion finely.
4. Rinse the rice.

Next, we proceed to the preparation of fish soup, for which we need:

5. Pour water into a saucepan, put salt, internal fat and liver.
6. Put the pan on the fire and add the prepared vegetables and rice there.
7. Bring to a boil and cook over medium heat until the potatoes are ready (15 minutes).
8. Add fish and bay leaf to the soup.
9. Increase the heat and bring to a boil, cook for another 2 minutes.
10. Turn off the heat and let the ear brew for 10 minutes under the lid.

Serve grayling fish soup on the table in serving plates, putting pieces of fish in each and sprinkling with herbs and ground black pepper. If desired, you can put a little butter (in the non-lean version of the soup).
