  • You can use this marinade not only to prep raw fish fillets for further cooking, but also for fish that's already fried or baked. It really brings out the flavor of the fish and adds a special zing! Finely chop the onion and garlic. In a small saucepan, combine the wine and vinegar, add the chopped garlic and onion along with the rosemary and bay leaf, and simmer everything together for two minutes. Stir the chopped parsley and basil into the marinade. While it's still hot, pour the marinade over fish you've fried in advance, add a few lemon slices, and let it cool before serving.
