- Soy marinade for ribs is easy and quick to make. The soy sauce in it pairs well with many other ingredients and gives the meat an East Asian, slightly spicy taste and aroma. This amount of marinade is enough for about one kilogram of ribs. For the soy marinade in this recipe, you'll need onion (green and regular), garlic, and chili pepper. The onions tenderize the meat and make it juicier and more tender, while the garlic and chili add a spicy, zesty taste. So, peel, wash, and dry the vegetables. Cut the onion into half-rings. Crush the garlic on a hard surface until it releases its juice, then cut it into slices. Wash the green onion and chili pepper. Remove the chili's seeds, cut off the stem, and chop the flesh with a knife. For a hotter taste, you can leave the seeds in. If you want milder meat in the end, you can leave out the chili altogether. Pat the green onion dry with paper towels and chop it finely. In the bottom of a separate dish large enough to fit all the ribs, lay the onion rings, chopped green onion, minced garlic, and chili pepper. Then sprinkle the mixture with salt and scrunch it with clean hands until the onion and garlic release plenty of juice. After that, pour the soy sauce, olive oil (you can use sunflower oil instead), and freshly squeezed lemon juice into the container. Melt the honey over a water bath (if it's already liquid, you don't need to) and mix it with the Dijon mustard and tomato paste. Stir well and add it to the onion and garlic in the container. Mix all the ingredients thoroughly. Then add the pepper blend, paprika, and cumin to the marinade to taste. Mix everything thoroughly by hand again and lower the ribs into the container. Coat each piece of meat on all sides with the marinade. Then cover the dish of ribs and marinade with a lid or plastic wrap and refrigerate overnight. While baking, periodically baste the ribs with the remaining marinade for better flavor. Happy cooking!
