Smoked Chicken Salad with Napa Cabbage and Pineapple

    Start with the smoked chicken. Pull off the skin and pick the meat from the bones. Cut as much chicken as you need for the salad into small cubes and put it in a roomy bowl — the one you'll build the salad in.
