Salsa with Tomatoes and Mango

This salsa is great with fish, meat, or seafood. Salsa (Spanish for "sauce") is a traditional Mexican sauce. It's a spicy vegetable sauce whose main ingredients are tomatoes and chili peppers. It can be made not only from vegetables but also from fruit (pineapple, mango, orange, papaya, and so on). Sometimes vegetables and fruit are used at the same time. These are modern variations of salsa.

    Get the ingredients ready, wash everything well, and peel the mango and onion. If you like, peel the tomato (mine had a very tender skin, so I left it on, and it didn't affect the taste).

    Cut the onion, tomato, and herbs into very small cubes. Cut the mango a little larger. I wash and clean the hot pepper only while wearing medical gloves — it's best to cover the cutting board with plastic wrap, since it's so fiercely hot. I take an amount about the size of a pinky fingernail, chop it very finely, and put it straight into a deep salad bowl.

    Add all the chopped ingredients to the same bowl, along with a pinch of salt, ground black pepper, and a little honey. Dress with 2 teaspoons of lemon juice and 1 tablespoon of olive oil, mix gently, and refrigerate for 10-15 minutes. That's it — the sauce is ready!

    It's very good served with any meat. Adjust the heat to taste.

    This time we had baked wings. The sauce tastes sweet-and-sour and spicy all at once, with the pleasant juiciness of the vegetables and the sweetness of the mango.

  • The sauce is very easy to make. Don't leave out the chili pepper — it's the highlight of the dish; without it you just get a salad of tomato, onion, fruit, and herbs. If you don't like spicy food, add just a little chili to the salsa.
