  • I love to cook, and my whole family happily samples every new recipe I try. One year a friend gave me a cookbook for my birthday, and in it I found a chapter on Portuguese cuisine. I'd never explored it before, so I was instantly curious. As it turns out, this cuisine is built on wonderfully simple techniques. Today I want to share one delightful dish with you: Portuguese Chickpea Salad. Chickpeas are a fantastic ingredient — I love adding them to all sorts of dishes, since they pair well with just about anything. Start by simmering the chickpeas until tender. Then seed the tomatoes and chop them into bite-size pieces. I also like to add bell pepper; if you're a fan too, use half a red and half a green one. Next, chop the eggs. Drain the oil from the tuna and add the tuna to the bowl. Slice the red onion into thin half-moons and stir in those chickpeas you cooked earlier. Dress the salad with olive oil and a squeeze of lemon juice. Spoon everything gently into a serving bowl and bring it to the table. Make this for someone you love, light a few candles, and pour two glasses of white wine — the evening is sure to be unforgettable.
