Chinese Hoisin Sauce

This Chinese sauce isn't hard to make at all — see for yourself! Hoisin sauce comes out thick and glossy, with a bold flavor that's hot, savory, and sweet all at once. It's often used as a glaze for meat — poultry, say — or for vegetables. It also works as a traditional table sauce for finished dishes, and in marinades.

  • Hoisin sauce is famous for good reason. Make it just once and you'll see that nothing else tastes quite like it — aromatic and savory, with just the right amount of sweetness. It elevates the flavor of any dish and lends meat a refined note.
  • So here's how we'll make this well-known Asian sauce:
    1. Pour the soy sauce into a suitably sized glass bowl, then add the vinegar and black bean paste. Stir everything gently.
    1. Now add the honey to the rest of the ingredients (liquid honey is best; if yours is thick, gently warm it in a water bath first, taking care not to overheat it).
    1. Next, stir in the chili sauce and sesame oil, and mix everything again.
    1. Peel the garlic cloves and mince them however you like — a fine grater or a garlic press works well, or you can simply chop them very, very finely with a knife. Add the minced garlic to the bowl.
    1. Last, add the spices to the bowl with the developing sauce — namely the famous Chinese five-spice blend. You can make the blend ahead of time yourself or buy it ready-made. The amount is up to you — add more or less to taste.
    1. Vigorously stir the contents of the bowl with a fork until smooth.
    1. Transfer the finished sauce to a clean glass container and use it as you like.
