  • This Vietnamese beef soup, pho bo, is well known to anyone who has traveled to Vietnam — or even just eaten at a Vietnamese restaurant. It may look exotic, but plenty of people love it and are happy to learn how it's made. There are many versions; here's one of them. Give it a try and I think you'll be hooked. Start by firming up the beef in the freezer for 30 to 40 minutes so it's easier to slice thin. While that chills, get the rest going: put the onion, star anise, peppercorns, and cinnamon in a pot with about 2 cups (0.5 l) of water, then add the broth and the fish sauce. Bring to a boil and simmer, stirring, for about 20 minutes. Fish out the onion, cinnamon, and star anise, and set the broth aside. Cook the rice noodles separately: drop them into boiling water for just a few seconds, then drain and rinse under cold water. Take the beef from the freezer and slice it into thin slivers. To assemble, divide the noodles among bowls and top with the sliced beef, chopped scallions and onion, a little cinnamon, hot pepper, and fresh herbs. Ladle the hot broth over everything, then finish with lemon. The soup is ready. In Vietnam, people often add a couple of dried shrimp to the bowl for an extra savory note. As you can see, there's nothing complicated about it — just a whole lot of flavor.
