Hearty Sausage Solyanka with Potatoes, Carrots, and Peas
The flavor of this solyanka is unforgettable — you'll want to make it again and again. I've tried plenty of recipes, and this is hands-down the best one! (Solyanka is a savory Eastern European soup built on a mix of cured meats and a tangy, hearty broth.)

Step 1:
Put a pot of water on the stove to heat.

Meanwhile, cut the carrot into matchsticks and the onion into half-moons, then sauté them together.

Stir in the tomato paste and cook for another minute or two.

Cut the potatoes into matchsticks and drop them into the boiling water. Add the peas and olives along with the liquid from their cans (I use the large 14-oz / 400 g cans).

Step 5:
Cut the sausage into matchsticks and add it to the pot.

Step 6:
Season with salt and pepper, drop in the bay leaf, and simmer until everything is tender.
