Autumn Minestrone

Want to bring a little bit of Italy to your kitchen? This soup makes it easy! Minestrone — literally "big soup" — is a soup loaded with all kinds of ingredients. The idea behind minestrone is that it should reflect exactly what's in season at your market or garden right now. It's an all-purpose dish, and there's no one strict recipe for it.

The best thing about minestrone: in summer it's light and made with the freshest vegetables, while in winter you make it heartier by adding potatoes, mushrooms, pasta, or beans.

Add whatever you like — that's the whole point of cooking, and of minestrone in particular.

Today mine turned out rich, fragrant, and full of autumn flavor — spicy and delicious!

Cooking method

  1. Step 1:

    Cut all the vegetables into small cubes.

    Finely chop the onion and garlic and sauté them in a saucepan in olive oil until translucent.

    Add the carrot and pumpkin to the onion and garlic and keep sautéing for another 3–4 minutes.

    Add the pepper, tomato, and celery, cover, and simmer for a couple of minutes.

    Pour in the broth (I use mushroom broth — I always freeze the liquid after boiling mushrooms for soups and sauces), season with salt and pepper to taste, and turn off the heat after three minutes. Let it rest a few minutes. Meanwhile, chop some celery leaves and the brisket for serving.

    Add the pieces of meat and fresh herbs to each bowl. Fragrant, spicy, and delicious! Enjoy :)
