  • Dice the potatoes, slice the carrot into medium-thick rounds, and finely dice the onion. Bring a pot of water to a boil, add the vegetables as soon as it boils, lower the heat, and simmer until tender. Near the end, pour in the peas, drop in the bay leaf, and season with salt and pepper. Sprinkle with fresh herbs before serving. The soup is tasty on its own, but a spoonful of homemade adjika makes it even better and prettier. Enjoy!
