Delicious mushroom morel soup is sure to please the whole family). Result To be honest, when I first heard the phrase "morel soup", I was sure that it was some kind of exotic dish. It turned out that morels are ordinary mushrooms, but I decided to cook soup anyway.

In my opinion, the recipe for making morel soup is quite laborious, but not complicated. From these soup ingredients, standard 4 servings are obtained.
The first morels appear after the last snowfall in late spring.
The collected morels are washed under water for ten minutes. Chop the mushrooms coarsely, pour a glass of cold water, add cloves and salt, and then cook over low heat for about 5 minutes.
Removing the morels from the stove, cut the onion into half rings and fry it on low heat for 15 minutes, stirring constantly.
Then add sugar and fry for another 10 minutes.
Pour the sherry and cook until the alcoholic smell disappears completely.
Add chicken broth to the resulting mixture and cook for half an hour on the lowest possible heat.
We take out a few mushrooms from the pan with morels, and pour everything else into the chicken broth.
Then add nutmeg and salt and bring to a boil – the soup is ready!
It is customary to make croutons for morel soup.
Toast the bread until crisp, cut out round croutons, which should be sprinkled with grated cheese, and put a few morels on top.
Put the resulting sandwiches in the oven and bake for 5 minutes at 180 degrees.
We set the table and serve morel soup with croutons!
