- Muhammara is a puréed dip that's hugely popular across the Levant, especially in Syria. Start by roasting the peppers in the oven, then peel off the skins and cut them into small pieces. Cut the bread into small pieces as well, and put the roasted peppers and bread into a food processor or blender. Pulse to chop them, then make the dressing: stir together the lemon juice, vinegar, and sugar, and pour it into the blender. Blend well with the bread mixture, then add the walnuts, cumin, garlic, and salt. Blend again, then pour in the oil and blend once more until you have a smooth, even purée. Spoon it into a bowl and serve as a dip for any sides. Muhammara can also work as a main dish — in that case, it's best served with sandwiches griddled with a slice of beef and sprinkled with grated cheese.
