  • Here's a recipe for a delicious, healthy soup. Puréed bean soup with pearl barley isn't quick to make, but it is simple. The evening before, put the beans in a pot of water and leave them to soak overnight. The next day, drain the beans, rinse them, add fresh water, and set the pot on the heat. Once the beans come to a boil, lower the heat and cook them for about an hour and a half. The cooking time can vary a lot depending on the variety and how firm the beans are — in general, cook them until they're soft. A few minutes before they're done, add the onion to the pot. In a second pot, bring salted water to a boil and add the rinsed pearl barley. Cook the barley for about 45–50 minutes, stirring now and then. When the barley is done, drain it and transfer it to a skillet with heated oil. Add the garlic, fry the barley for a couple of minutes, then stir in the herbs. Fry for one more minute, season with salt and pepper, and take it off the heat. Meanwhile, pour the cooked beans, along with the onion and their liquid, into a blender and purée. Once smooth, stir in a little oil and gently reheat if you like. Season with salt and pepper. To serve, ladle the purée into a bowl first, then top with the herbed barley. And the soup is ready.
