Classic Fried Cottage Cheese Syrniki

Eat one and you're right back in childhood — this is how our moms and grandmothers made them. Just about every family makes syrniki: some add raisins, some baking soda, some vanilla... All of those are fine, but here I'm sharing the classic version as a base! These syrniki hold their shape beautifully — they don't crack in the pan, don't spread, and don't stick. Give them a try!

    Mash the cottage cheese well with a fork or push it through a sieve to break up any lumps — if yours is fine-grained, you can skip this step. For syrniki, the cheese shouldn't be too wet, but it shouldn't be dry either.

    Add the sugar.

    Mix well.

    Now add the flour.

    Mix thoroughly until you have a smooth mixture that holds its shape well.

    Take a heaping tablespoon of the cheese mixture and, with hands moistened in water, roll it into a ball.

    Flatten it slightly.

    Dredge both sides in flour.

    It's handy to set the shaped syrniki on a board — this amount of ingredients made 11 medium ones for me.

    Fry the syrniki in a skillet with a little vegetable oil for 2–3 minutes per side, until golden.
