  • First, let's deal with the steaks. Cooked shark meat is very tender and tasty, with no small bones at all. But the blood of almost all sharks, unlike other fish, contains a lot of urea, which gives the raw meat an ammonia smell and a bitter-sour taste. Don't let that put you off — a little extra prep before cooking removes those qualities completely and reliably. So, how to prep the meat. A few methods work: — Pre-boil the fish. — Soak it in milk or acidified cold water (up to 2 hours). — And using acidic ingredients during cooking is guaranteed to clear away any traces left after soaking. For this recipe, start the prep the evening before your cookout. Here's how:
  • — Soak the steaks for 30 minutes in cold water with half of the lemon juice. While the shark soaks, make the marinade: in the dish you'll marinate both steaks in, stir together all the ingredients except the steaks. Now marinate the shark: — Take the steaks out of the acidulated water and pat them dry with paper towels. — Add the fish to the marinade and rub it in well on all sides. — Leave it in the fridge until it's time to head out. You can marinate the shark faster if you're pressed for time — even 2 hours will do — but longer is better.
