Cooking method
To make a marinade for pork, put the spices in a saucepan and fry for 3 minutes. Fill with water, add salt, sugar, ginger and garlic. Bring the marinade to a boil and immediately remove from heat. Pour in the rum and let cool to room temperature. Put the pork tenderloin in a bowl, pour the brine and leave in the refrigerator for 4 hours.
Meanwhile, prepare the sauce. Put the spices in the same saucepan and lightly fry for 30 seconds to get the flavor. Heat the oil in a small frying pan over medium heat. Add ginger, garlic and chili pepper. Fry, stirring constantly, for about 3 minutes. Pour in the vinegar, add the toasted spices and brown sugar, mix all the ingredients well. Add salt and pineapple slices. The sauce should be brought to a boil, then simmer for another 20 minutes. Then remove the sauce from the heat, add the onion, mint and lime juice. The sauce is ready.
When the meat has cooled sufficiently, preheat the grill to medium-high temperature. Remove the meat from the brine and dry it with a paper towel. You can add salt and pepper to taste. Lubricate the grill grate with vegetable oil. Fry the meat well on each side until golden brown. Turn off the grill, cover the meat with foil and continue cooking for another 10 minutes. Take it out and let it stand for 5 minutes.
Free the meat from the foil and cut into pieces. Serve with hot sauce.
