- To make the brine for the pork, put the whole spices in a saucepan and toast them for 3 minutes. Add the water, then the salt, sugar, ginger, and garlic. Bring the brine to a boil and immediately pull it off the heat. Stir in the rum and let it cool to room temperature. Put the pork tenderloin in a bowl, pour the brine over it, and refrigerate for 4 hours. Meanwhile, make the sauce. In the same saucepan, toast the spices for about 30 seconds until fragrant. Heat the butter in a small skillet over medium heat and add the ginger, garlic, and chili. Sauté, stirring constantly, for about 3 minutes. Pour in the vinegar, add the toasted spices and brown sugar, and stir everything together well. Season with salt and add the pineapple pieces. Bring the sauce to a boil, then simmer for another 20 minutes. Take it off the heat and stir in the green onion, mint, and lime juice — the sauce is ready. Once the meat has chilled, heat the grill to medium-high. Lift the pork from the brine and pat it dry with paper towels, seasoning with salt and pepper to taste. Brush the grill grate with oil and sear the pork well on each side until golden. Turn off the grill, tent the meat with foil, and let it keep cooking in the residual heat for another 10 minutes. Remove and rest for 5 minutes, then unwrap and slice. Serve with the spicy sauce.
