Pork and Potatoes in a Clay Pot

One of the most popular dishes of the Balkan Peninsula. You can use veal or lamb as the main ingredient instead. It must be cooked in ceramic cookware or in individual clay pots.

  • Cut the meat into 1½-inch (4 cm) cubes. Slice the onion into strips. Peel the potatoes and cut them into quarters. Cut the zucchini and eggplant into short sticks. Slice the bell pepper and parsley root into rings. Fry the meat cubes in hot sunflower oil until golden. Add the onion to the meat and fry until it, too, turns golden. Layer all the ingredients evenly into the clay pot, season with the spices, and stir. Pour in the broth or water and cover with the lid. Preheat the oven to 400°F (200°C) and cook for 1½ hours.
