Step 1:
Add cognac to the chilled coffee and, moistening the cookies, spread the first layer on the tray.
Step 2:
Beat the cream with part of the powdered sugar to a thick foam and put it in the refrigerator.
Step 3:
Separate the yolks from the proteins. Yolks and whites separately are also whipped with part of the powder to a thick foam (if we beat it badly, then the cream will then become liquid)
Step 4:
Add cheese to the beaten yolks and mix with a spatula (in no case do not beat), then add the whipped whites and cream.
Step 5:
Spread the first layer of cream on top of the cookies.
Step 6:
We spread the second layer of cookies.
Step 7:
And apply the remaining cream.
Step 8:
Sprinkle with cocoa powder and put it in the refrigerator.
