Yeast dough with nuts and candied fruits for a roll

Amazing dough that makes perfect pastries! This dough was taught to me by my mother-in-law, who has worked as a cook almost all her life. I have made pastries from such dough more than once - it always turns out delicious and fragrant. Try it!

Cooking method

Cooking time: 10 h 30 min

Let's start with the preparation of ingredients:

- finely chop candied fruits;

- we also chop almonds, but already large;

- remove the zest from the lemon;

- mix all the ingredients in one container and pour rum and leave for a couple of hours (ideally overnight).

And now, directly, the dough itself:

- warm up the milk to a warm state, add fresh yeast, pour in a little sugar (20 g), stir;

- sift flour into a large bowl, pour in the rest of the sugar, add a pinch of salt and cinnamon, cardamom (for flavor);

- make a recess in the dry flour mixture and pour the prepared milk into it, sprinkle with flour and leave for 15 minutes;

- then add the softened butter and eggs, knead the soft, elastic dough and leave it under the cling film for an hour.

Next, to mix the finished dough with candied fruits and nuts, divide it into a couple of parts, each of which is rolled into a thin layer, generously sprinkle with a prepared mixture of almonds and candied fruits, roll them in with a rolling pin, then mix all the parts together.

This is how the dough turned out - beautiful, soft and plastic!
