Queen of Spades Salad

A wonderful salad made from wholesome ingredients! The Queen of Spades salad tastes like an ordinary beet salad with mayonnaise and nuts, but the extra additions — pickles, apple, and prunes — round it out in a surprisingly harmonious way, giving it real heartiness and a gentle tang. You can use store-bought pickles, but crisp, barrel-cured ones from the farmers' market are just the thing. Be sure to rinse the prunes well and remove any pits you find. Any apple will do, as long as it's juicy.

    Get your boiled, peeled beets ready (ideally sweet, juicy ones with a deep dark-burgundy color), along with barrel pickles, prunes, mayonnaise, an apple, and a few walnuts. Pour boiling water over the prunes and set them aside for now.

    Grate the beets on a coarse grater and gently spread them into a roomy salad bowl.

    To the grated beets, add the pickles cut into short strips or cubes, along with the apple — peeled, cored, and grated on a coarse grater.

    Drain the prunes and cut them into thin strips (or cubes, if you diced the pickles). Chop the walnuts and add them to the salad. Season with salt to taste. You can also add spices to taste, such as ground black pepper.

    Dress the finished salad with mayonnaise, toss, and serve. You can serve it right away, but the Queen of Spades is even better chilled. Instead of mayonnaise, you can dress it with olive oil or any other vegetable oil for the healthiest, lightest version.

  • For a festive presentation, this salad is often decorated with a piped mayonnaise spade or shaped on the plate like a playing-card spade. The Queen of Spades is especially good with homemade mayonnaise. It's light, easy to digest, and gentle on the stomach. If it suits your taste, you can add a little minced garlic.
