Classic Beef Kharcho with Rice
A thick, rich soup for true food lovers! Kharcho is a hearty soup that comes to us from Georgia. The classic recipe has been changed over time, and people make it all sorts of ways. But nothing compares to real Georgian kharcho, so I suggest making it the proper way: with tkemali and walnuts, and specifically with beef. (Tkemali is a Georgian sour plum sauce; khmeli-suneli is a Georgian spice blend.)

- Make a "strong" broth: wash the beef, cover with water (1.5 liters / about 6 cups), and boil until fully cooked, about 2 hours. Then take the meat off the bone, cut it into small pieces, and return it to the broth.
- At this point, stir the tkemali into the broth. Peel the onion and carrot; cut the carrot into cubes and the onion into strips. Bring the soup to a boil, add the carrot, cook for 10 minutes, then add the onion and cook for 25–30 minutes.
- Meanwhile, work on the walnuts: grind them in a mortar. And the garlic: peel it and press it (you can also grate it or crush it in a mortar).
- Add the rinsed rice to the soup and cook for exactly 10 minutes, then stir in the garlic-walnut paste. Cook the kharcho for another 15 minutes, then add the spices: khmeli-suneli, coriander, and ground black pepper. Don't forget the salt! Keep the soup over very low heat the whole time, since it's thick and can scorch.
- Rinse the herbs (parsley, dill, and cilantro), chop them finely, stir them into the kharcho, keep it on the heat for another minute or two, then take it off.
- Be sure to let the kharcho rest for at least 5–10 minutes.
