Classic Kharcho in a Slow Cooker

Want to try a fragrant Georgian soup? Make it the easy way! My husband has recently become a huge fan of Georgian cooking — kharcho soup in particular won him over. I make this rich, thick, spicy soup in the slow cooker using a classic recipe. I'm sharing all my secrets, so cook, taste, and treat your family! (Kharcho is a Georgian beef soup; khmeli-suneli is a Georgian spice blend.)

    1. Wash the beef well and cut it into serving pieces.
    1. Peel the onion and cut it into small cubes. Peel the parsley root and grate it.
    1. Grind the walnut kernels together with the black peppercorns in a blender (or in a mortar if you don't have a blender).
    1. Rinse the cilantro and parsley, let them dry, and chop with a knife.
    1. Cut the chili pepper into thin rings.
    1. Peel the garlic and press it.
  • Prep done — easy! Now on to the cooking:
    • put the parsley root, onion, and chili pepper into the slow cooker bowl, pour in the vegetable oil, and fry for 7 minutes on the "Sauté" setting;
    • then add the meat and cook on the same setting for 10 minutes, stirring occasionally;
    • put the flour in a cup, stir in a little water (about 1 tablespoon), and add it to the slow cooker bowl;
    • now pour in the water and pomegranate juice, add the pre-rinsed rice, the walnuts ground with pepper, the tomato paste, and the spices: bay leaf, khmeli-suneli, peppercorns, and salt;
    • switch to the "Soup" setting and cook, covered, for an hour and a half;
    • after the beep, add the garlic and the chopped cilantro and parsley to the kharcho, and let it rest, covered, for 5–10 minutes.
