Broccoli Cheese Soup
A wonderful dinner — make it and wow your family! We haven't gotten tired of creamy puréed soups yet. This one is packed with the flavor of its star ingredient (broccoli, in this recipe), and topped with crispy pork belly and croutons, it turns into a real restaurant-worthy dish. My daughter keeps asking for it: "Mom, I want soup just like at a restaurant!"

- Let's get started:
- peel the onion, rinse it, dice it small, and sauté in the butter until soft and translucent (no need to let it brown for this recipe);
- wash the broccoli well, cut it into florets, and add it to a small pot with the onion;
- add salt and black pepper, pour in the boiling water, and cook over medium heat for about 20 minutes, until the broccoli is fully tender (pierce a floret with a fork — if it's soft, it's ready);
- grate the cheese, add it to the soup, and blend everything together with an immersion blender until completely smooth;
- stir the ground nutmeg into the soup and pour in the cream;
- ladle the soup into bowls (it's best to warm it slightly before serving) and top with the crispy pork belly. Serve with croutons.
