Classic Okroshka with Mayonnaise

A tasty okroshka — a cold summer soup — with a zesty kick for meat lovers! My husband is one of those people who won't eat okroshka made with bologna. So just for him I make it with pork and dress it with mayonnaise, which gives the dish a nice tangy edge. It really does turn out delicious and filling, and I love this version too. Give it a try!

  • Prep the ingredients: boil the pork in lightly salted water until cooked through; boil the potatoes in their skins; hard-boil the eggs; boil the peas for 8 minutes, then drain them in a sieve and let the water run off; rinse the parsley and dill. Now it's time to chop everything. Peel the potatoes and eggs and dice them small, along with the cucumbers. Finely chop the parsley and dill. Slice the green onions, white parts and all. Dice the pork small too, so it's in proportion with the rest of the ingredients. Combine all the chopped ingredients in one large pot (a bowl works too), add the green peas, and chill in the refrigerator for a couple of hours. After 2–3 hours, the okroshka is ready to serve. It's served a special way: ladle a portion from the pot into each bowl, then everyone stirs in mayonnaise, salt, pepper, and whey to taste. Your cold soup is ready — enjoy!
