Cooking method
Cut the bacon and onion into small cubes, fry them together in a frying pan. Pour water into a saucepan, send it to the fire. When the water gets hot enough, add the bacon and onion.
When the broth boils, add the pre-chopped carrots and cucumber. Cook for 4-5 minutes, then add pasta, chopped chili peppers and tomatoes, beans.
Pour tomato juice into the broth, add salt and ground black pepper, mix and cook until the pasta is ready.
2 minutes before cooking, add garlic, cut into a couple of slices, and small spinach leaves whole.
Serve minestrone, garnished with herbs and thin plates of parmesan.
