Italian Minestrone Soup

  • Dice the bacon and onion and sauté them together in a skillet. Meanwhile, bring the water to a boil in a large pot. Once it's hot, add the bacon and onion. When the broth comes to a boil, add the diced carrot and cucumber. Simmer for 4–5 minutes, then stir in the pasta, the chopped chili pepper and tomatoes, and the beans. Pour the tomato juice into the broth, season with salt and black pepper, stir, and cook until the pasta is tender. About 2 minutes before it's done, add the garlic (cut into a couple of slices) along with the whole baby spinach leaves. Serve the minestrone garnished with fresh herbs and thin shavings of Parmesan.
