Green borscht with sorrel and quail eggs

Delicious, fresh, hearty soup with sorrel. Cook for the family for lunch! I want to share with you a recipe for green borscht, which I love to cook. The soup turns out very tasty - quail eggs add a little unusual to it. Children love to eat it in many ways also thanks to them. And the unusual adds rice. Try it!

Cooking method

Cooking time: 2 h 50 min

1. In a saucepan with water, add beef ribs, garlic and allspice. The ribs must first be washed.

2. Bring to a boil and remove the foam with a slotted spoon, then cook on low heat for 1.5-2 hours.

3. While the ribs are cooking, peel and dice the potatoes and wash the rice.

4. Add potatoes and rice to the pan, cook for 20 minutes. We put quail eggs to cook.

5. Meanwhile, cut the carrot into slices and coarsely chop the sorrel. Cut the rest of the greens: parsley, dill and green onions.

6. Add carrots to the pan, salt to taste and cook for 10 minutes.

7. Cut the quail eggs into pieces (part of the eggs should be left to serve, cut in half).

8. Remove the garlic from the broth. Add chopped eggs, sorrel and herbs.

9. Turn off the heat and let the borscht brew under the lid for 10 minutes.

Serve to the table with sour cream and egg halves!
