Classic Olivier Salad with Bologna and Canned Peas

- Hard-boil the eggs. In a separate pot, boil the carrots and potatoes. Let everything cool. 2. Meanwhile, cut the bologna into cubes. 3. Cut the dill pickles the same way. 4. Likewise, dice the cooled eggs, carrots, and potatoes. Try to keep all the cubes about the same size. 5. Combine all the ingredients and add the green peas, saving a few peas for garnish. 6. Chill the salad in the refrigerator for 2–3 hours. 7. Just before serving, dress the salad with mayonnaise and add salt if needed — I skip this, since the mayonnaise is salty enough for my taste. The salad looks lovely plated in individual portions with serving rings (you can even make your own), or spooned into pretty glasses or stemmed goblets for an original touch. Garnish with fresh herbs and the reserved peas. Enjoy, and happy holidays!
